<p class="b">Iron in food comes in two forms, and the <a href="https://ods.od.nih.gov/factsheets/Iron-Consumer/" target="_blank" rel="noopener">NIH Office of Dietary Supplements</a> is direct about the difference. Heme iron sits in meat, seafood and poultry. Nonheme iron sits in plant foods and fortified foods. Meat, seafood and poultry carry both.</p>
<p class="b">The body does not absorb nonheme iron as well as it absorbs heme iron. That single fact explains the whole plan. ODS notes that people who eat a mostly plant based diet need almost twice as much iron as the standard amount for that reason.</p>
<p class="b">The best sources are not a mystery. Lean red meat, especially beef. Oysters. Salmon, tuna and dark poultry meat. On the plant side, dried beans, lentils, spinach, kale, collards, broccoli, asparagus, dried fruit and fortified cereals.</p>

<p class="b"><a href="https://medlineplus.gov/ency/article/002422.htm" target="_blank" rel="noopener">MedlinePlus</a> gives the pairing plainly. Mix some lean meat, fish or poultry with beans or dark leafy greens at a meal and you can improve absorption of the plant iron up to three times. Foods rich in vitamin C do the same job, and it names citrus, strawberries, tomatoes and potatoes.</p>
<p class="b">Cooking in a cast iron skillet also raises the iron your food delivers. That is a free upgrade sitting in most kitchens.</p>
<p class="b">Then the other direction. Black teas contain substances that bind dietary iron so the body cannot use it. Calcium can interfere too, which is why calcium and iron belong at different times of day. And two common acid reducers, lansoprazole and omeprazole, lower stomach acid, so they may reduce how much nonheme iron you take from food.</p>

<p class="b">Low iron is quiet at first. ODS says that in the short term, getting too little iron causes no obvious symptoms, because the body draws on the iron stored in muscle, liver, spleen and bone marrow. Only when those stores run down does anemia set in.</p>
<p class="b">So the answer does not come from how you feel. The <a href="https://www.nhlbi.nih.gov/health/anemia/iron-deficiency-anemia" target="_blank" rel="noopener">National Heart, Lung, and Blood Institute</a> describes the actual route. A doctor orders a blood test that checks your complete blood count, hemoglobin, blood iron and ferritin. Treatment then often takes three to six months to restore your levels.</p>
<p class="b">There is a real reason not to self prescribe here. Some people inherit a condition that makes the body absorb too much iron, and they should avoid iron supplements entirely. And iron supplements carry a warning to keep them away from children, because accidental overdose is a leading cause of fatal poisoning in children under six.</p>
